Agricola Cake, the Finnish cake commemorating Mikael Agricola (1510-1557) and the Finnish Language. You can buy it in most anywhere in Finland on Agricola Day, April 9th. Agricola cake is made with oatmeal bottom, with lingonberry flavored cream in the middle, and more compact taste in the crust, and with whole lingonberries on top. It is a reminder of the multi-layered work that Mikael Agriciola did for the Finnish language and the Finnish speaking people in Finland, then part of Sweden.
